Tres Leches Cake

1. 1 white cake mix
2. 3/4 cups coconut milk
3. 3 eggs
4. 1/4 cup vegetable oil
5. 1 can sweetened condensed milk
6. 1 can evaporated milk
7. 1 teaspoon vanilla
8. 1 cups heavy whipping cream
9. Cool whip 
10. Cinnamon

1. Prepare & bake the cake according to package instructions except instead of adding water use coconut milk.
2. Remove the cake from the oven and poke with holes all over.
3. In a medium sized mixing bowl, stir together the whipping cream, evaporated milk and one can of sweetened condensed milk and vanilla.  
4. Pour the mixture over the warm cake and then place a piece of plastic wrap over the top and refrigerate overnight.
5. Frost the top of the cake with fresh whipping cream or Cool Whip and sprinkle with cinnamon.
