Greek Salad (Platter Style)


2-3 heads romaine lettuce, torn into bite size pieces

1 cup cucumber, diced

1/4 cup kalamata olives

Diced 1/2 cup tomatoes, seeded

Diced 1/2 cup feta cheese

Crumbled 1/4 cup red onion

1/2 cup garbanzo beans

Juice of 1 lemon

1 teaspoon oregano

Salt and pepper, to taste

1 tablespoon honey

1/4-1/2 cup olive oil

To assemble the platter, place the torn lettuce on the bottom of the platter. Then create rows of toppings on top. To make the dressing, whisk together the lemon juice, oregano, salt and pepper, honey and olive oil. Drizzle the dressing over the top before serving.
