Tapioca Pearls

  1. 1 cup tapioca pearls
  2. 10 cups of water
  3. Simple syrup

To prepare tapioca pearls:

  1. In a large stock pot, bring 10 cups of water to a rolling boil.
  2. Slowly add in the tapioca pearls and give them a gentle stir.
  3. Allow the pearls to rise to the top and then reduce the heat to medium heat and put the lid on pot for 3 to 5 minutes.
  4. Once the pearls have reached your desired texture.
  5. Use a strainer to remove the pearls and place in any airtight container to cool.
  6. While cooling pour honey or simple syrup over the pearls.
  7. Once cooled store in refrigerator for up to a week.
