- 2 cups edamame, shelled
- 2 cloves garlic
- 1/4 cup tahini*
- 3 lemons, juiced
- 1/2 bunch cilantro
- 3/4 teaspoon sea salt or Himalayan salt
- 1/4 teaspoon pepper
- 1/4 cup water
- 1/2 cup olive oil
- Put all of the ingredients in a food processor or high powered blender and pulse until smooth.
- Add more water and oil to help if needed and making smooth.
- Allow the hummus to chill covered in the refrigerator for two hours before serving.
**Add jalapeño for a kick or additional seasonings for a change in flavor
