Sweet Potato Wedges

Sweet Potato Wedges

(For dipping)

  1. 2 sweet potatoes
  2. Olive oil
  3. Himalayan sea salt
  4. 1 teaspoon honey
  5. Assorted seasoning blends

  1. Preheat oven to 375 degrees.
  2. Line a baking sheet with parchment paper. 
  3. Cut the ends off of the sweet potato and then cut in half lengthwise.
  4. Keep peels on to roast.
  5. Cut sweet potato into long wedges.
  6. Remember, keep wedges on the larger side because because they will shrink as they cook.
  7. In a small bowl stir together the olive oil and honey.
  8. Brush wedges with olive oil and set on baking sheet.
  9. Sprinkle with your favorite seasoning blend.
  10. Cook in the oven for 30-40 minutes.
  11. Flip the wedges over half way through cooking time.
  12. Remove from the oven and cool. ****Do not over cook!
