The Perfect Omelet
- 2 eggs, whipped
- 2 tablespoons milk alternative
- 1 tablespoon olive oil
- Assortment of chopped fresh veggies: spinach, mushrooms, onion, peppers
- Assorted herbs for added flavor
- Himalayan pink sea salt and pepper
- Sliced avocado
- Fresh salsa
- Whip together the eggs and milk alternative till frothy.
- Set a nonstick skillet on the stove top and swirl with olive oil and heat to medium high heat.
- Add salt and pepper to the eggs and stir in veggies.
- Pour the egg mixture into the hot pan.
- DO NOT MESS with the egg except to tilt the pan to make sure uncooked egg spreads to the heat.
- Allow egg to cook and then gently lift up the sides and fold like a letter into thirds.
- Remove from the heat and top with fresh salsa and sliced avocado.
