The Perfect Omelet

  1. 2 eggs, whipped
  2. 2 tablespoons milk alternative
  3. 1 tablespoon olive oil
  4. Assortment of chopped fresh veggies: spinach, mushrooms, onion, peppers
  5. Assorted herbs for added flavor
  6. Himalayan pink sea salt and pepper
  7. Sliced avocado
  8. Fresh salsa


  1. Whip together the eggs and milk alternative till frothy.
  2. Set a nonstick skillet on the stove top and swirl with olive oil and heat to medium high heat.
  3. Add salt and pepper to the eggs and stir in veggies.
  4. Pour the egg mixture into the hot pan.
  5. DO NOT MESS with the egg except to tilt the pan to make sure uncooked egg spreads to the heat.
  6. Allow egg to cook and then gently lift up the sides and fold like a letter into thirds.
  7. Remove from the heat and top with fresh salsa and sliced avocado.
