Steakhouse Augratin Potatoes
- 4-5 russet potatoes, peeled
- 2 tablespoon olive oil
- 1 onion, sliced thin
- 2 tablespoon butter
- 2 cups white cheddar cheese, freshly grated
- 1 cup gruyere cheese, freshly grated
- 1/2 cup Parmesan cheese, grated
- 2 cups whipped cream
- 1 teaspoon salt
- 1/2 teaspoon white or black pepper
- Preheat oven to 350 degrees.
- Spray a 10-cup deep baking dish.
- Peel potatoes 1/8 inch thick on a mandolin or using a sharp knife. (Be careful. Very very thin)
- Cook onions in a hot skillet with olive oil until onions are golden brown but not burned.
- This will take about 10 minutes over medium low heat.
- Once the onions are done cooking add the butter and stir together until melted.
- Remove from the heat and set aside.
- In a large bowl, mix together the thinly sliced potatoes, 2 cups whipping cream, 1 1/2 cup cheddar cheese, 1/2 cup gruyere cheese and 1/4 cup of Parmesan cheese.
- Stir to coat the potatoes.
- Add the onions, salt and pepper.
- Stir together then pour into the prepared pan.
- Press the potatoes down into the baking dish and sprinkle with the remaining cheeses.
- Cook for 1 1/2 hours or until golden brown and bubbly.
- Remove from the oven and allow the dish to cool for at least 15 minutes before serving.
