Skillet Sweet Potato
- 4 cups sweet potatoes, peeled and cubed
- 4 tablespoon unsalted butter
- 1/2 cup brown sugar
- 1/4 teaspoon nutmeg
- 2 tablespoon maple syrup
- Pinch of salt
- 1/4 cup water or rum
- 1/2 cup pecans, chopped
- In a large cast iron skillet, melt the butter over medium heat.
- Stir in brown sugar, nutmeg, and maple syrup.
- Cook till sugar is melted and then add in the sweet potatoes.
- Toss together so that all of the potatoes are coated with the sweet syrup.
- Add a little bit of liquid to the pan and place a lid on top.
- Continue to cook for 10 minutes, adding more liquid and stirring as needed.
- Potatoes are done when they are fork tender.
- Remove from the heat and sprinkle with chopped pecans.
- Serve warm.
