Fall Pear Salad

  1. 3 cups baby spinach
  2. 3 cups arugula
  3. 1/4 red onion, sliced thin
  4. 1 red pear, sliced
  5. 1/4 cup shaved Parmesan
  6. 1/4 cup candied pecans

Dressing:

  1. 1 small shallot, finely diced*
  2. 1 tablespoon Dijon mustard
  3. 1/3 cup balsamic vinegar
  4. 2/3 cup extra-virgin olive oil
  5. 2 teaspoons maple syrup
  6. Kosher salt and freshly ground black pepper

To make the dressing:

  1. Combine all of the ingredients in a bowl and whisk together or put then in a mason jar and shake with the lid on.
  2. Place all of the ingredients in a large bowl and drizzle with dressing and toss together.
