Fall Pear Salad
- 3 cups baby spinach
- 3 cups arugula
- 1/4 red onion, sliced thin
- 1 red pear, sliced
- 1/4 cup shaved Parmesan
- 1/4 cup candied pecans
Dressing:
- 1 small shallot, finely diced*
- 1 tablespoon Dijon mustard
- 1/3 cup balsamic vinegar
- 2/3 cup extra-virgin olive oil
- 2 teaspoons maple syrup
- Kosher salt and freshly ground black pepper
To make the dressing:
- Combine all of the ingredients in a bowl and whisk together or put then in a mason jar and shake with the lid on.
- Place all of the ingredients in a large bowl and drizzle with dressing and toss together.
