Healthy Sausage & Peppers Pasta Boat
- 1/2 red, yellow & green pepper, sliced thin
- 1/2 yellow onion, sliced thin
- 1 cup mushrooms, sliced
- 2 cloves garlic, chopped
- 4 links chicken Italian sausage
- 2-3 tablespoons olive oil
- 1 spaghetti squash, cut in half & seeds removed
- Salt and pepper
- 1/2 teaspoon oregano
- Fresh basil
- 2 cups favorite pasta sauce, warmed
- Garnish: Grated Parmesan cheese
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Cut the spaghetti squash in half lengthwise and remove seeds.
- Brush the insides of the squash halves with EVOO and sprinkle with salt and pepper.
- Turn cut side down and bake for 40 minutes.
- While the squash is cooking, sauté the peppers, onion, garlic, mushrooms and sausage in olive oil till veggies are tender.
- Once the squash is done cooking in the oven invert the squash cut side up and use a fork to scrape the inside of the squash and “spaghetti” strands will fill the squash shell.
- Add 1/2 of the sausage and peppers mixture to the boat & pour 1 cup of warm pasta sauce over the top and sprinkle with fresh basil and parmesan cheese.
