Healthy Sausage & Peppers Pasta Boat

  1. 1/2 red, yellow & green pepper, sliced thin
  2. 1/2 yellow onion, sliced thin
  3. 1 cup mushrooms, sliced
  4. 2 cloves garlic, chopped
  5. 4 links chicken Italian sausage
  6. 2-3 tablespoons olive oil
  7. 1 spaghetti squash, cut in half & seeds removed
  8. Salt and pepper
  9. 1/2 teaspoon oregano
  10. Fresh basil
  11. 2 cups favorite pasta sauce, warmed
  12. Garnish: Grated Parmesan cheese 


  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. Cut the spaghetti squash in half lengthwise and remove seeds.
  3. Brush the insides of the squash halves with EVOO and sprinkle with salt and pepper.
  4. Turn cut side down and bake for 40 minutes. 
  5. While the squash is cooking, sauté the peppers, onion, garlic, mushrooms and sausage in olive oil till veggies are tender. 
  6. Once the squash is done cooking in the oven invert the squash cut side up and use a fork to scrape the inside of the squash and “spaghetti” strands will fill the squash shell.
  7. Add 1/2 of the sausage and peppers mixture to the boat & pour 1 cup of warm pasta sauce over the top and sprinkle with fresh basil and parmesan cheese.
  8. Enjoy!
