Pumpkin Cookies

1. 1 box Pumpkin Bread Mix
2. 1 cup unsalted butter, room temperature
3. 1 egg
4. 1 tsp vanilla
5. Cream cheese frosting

1. Melt butter in a microwave safe bowl until softened.
2. Preheat oven to 400 degrees.
3. Line baking sheet with parchment paper.
4. Mix together the butter, sugar, vanilla and egg in a large bowl until smooth.
5. Slowly pour in Trader Joe’s pumpkin bread flour and mix into a dough.
6. Roll the dough along the inside of the bowl to form a large ball.
7. Cover dough with plastic wrap for one hour before baking.  
8. Use a cookie scoop to dip out cookies onto baking sheet leaving 2 inches apart.
9. Bake for 10-15 minutes.
10. Cool cookies and then frost with cream cheese frosting and a sprinkle of chopped pecans.
