Chewy Molasses Spice Cookies
- One and a half sticks unsalted butter, room temperature
- 1 1/2 cup granulated sugar, divided
- 1/4 cup molasses
- 1 egg
- 1 tablespoon pumpkin pie spice
- 1 1/2 teaspoon baking soda
- 1/4 teaspoon allspice
- 1/2 teaspoon salt
- 2 cups all purpose flour
- Preheat oven to 350 degrees.
- Line 2 baking sheets with parchment paper.
- Use a medium sized bowl and beat together the butter and one cup of granulated sugar for two minutes or until fluffy using an electric mixer.
- Beat in the egg and vanilla until incorporated. In another bowl, mix together the flour, spices and baking soda.
- Slowly add the dry ingredients to the butter mixture until it is all mixed together.
- Use a cookie scoop to portion out the cookies and drop into the leftover 1/2 cup sugar.
- Roll the dough in the sugar and set on baking sheet.
- Allow at least 3 inches between cookie balls.
- Cook for 10-13 minutes or until lightly toasted.
- Remove from the oven and set cookies on a cooling rack.
- Enjoy with a cold glass of milk!!
