Warm Rice Pudding 

  1. 2 1/2 cups leftover rice
  2. 2 cups coconut milk
  3. 2 tablespoons butter
  4. 3 tablespoons agave nectar or honey
  5. 1 teaspoon vanilla extract
  6. 1 cinnamon stick or 1 teaspoon cinnamon*
  7. Garnish: toasted pecans, raisins, dried cranberries, toasted coconut


  1. In a medium sized saucepan, warm coconut milk with butter, agave nectar, and cinnamon stick.
  2. Stir in cooked rice and continue to cook until it thickens.
  3. Serve in small bowls and garnish with dried fruit, toasted nuts and coconut.
