Baking Sheet Breakfast

  1. 1 package frozen hash browns
  2. 1 teaspoon garlic powder
  3. 1/2 teaspoon salt
  4. 1/2 teaspoon pepper
  5. 3-4 tablespoons olive or canola oil
  6. 1 cup chopped bell peppers/onion/mushrooms (your choice)
  7. 6 eggs
  8. 6 - 8 slices or link sausage 


  1. Preheat oven to 425 degrees.
  2. Line a baking sheet with foil.
  3. Spray with nonstick cooking spray.
  4. In a large bowl, mix together the hash browns, garlic powder, salt, pepper and veggies.
  5. Pour the hash brown mixture onto 1/2 of the baking sheet.
  6. Bake for 30 minutes.
  7. Remove from the oven and flip the hash browns. 
  8. Add sausage to the other half of the baking sheet and return to the oven for an additional 10 minutes.
  9. Remove the baking sheet.
  10. Crack the eggs on top of the hash browns.
  11. Sprinkle with salt and pepper.
  12. Return to the oven for 10 more minutes and then take out and serve!
