Mojo Chicken Cuban Sandwich

Mojo Chicken Cuban Sandwich

  1. 2 cups mojo marinade
  2. 2-4 chicken cutlets
  3. 1 large French Cuban loaf, cut into 1/4
  4. 12 slices Swiss cheese
  5. 12 slices Black Forest deli ham 
  6. 1/4 cup Dijonaisse sandwich dressing
  7. Room temperature butter or margarine
  8. Dill pickle slices
  9. Foil and parchment paper


  1. Marinade the chicken in mojo marinade.
  2. Store the marinated chicken in an airtight container and chill in the refrigerator for at least 2 hours before preparing sandwiches. 

To prepare sandwiches:

  1. Sauté the chicken in the skillet until cooked through.
  2. Remove from the skillet & set on a plate.
  3. Cut chicken into slices for the sandwich. 
  4. Preheat skillet or panini press to medium high heat.
  5. Cut each loaf piece in half lengthwise.
  6. Spread dijonaisse on each half. 
  7. Add 3 ham slices to each sandwich, top with sliced chicken, 3 slices Swiss cheese and pickles.
  8. Put the bread lid on top.
  9. Cut sheets of foil & parchment double the size of each sandwich.
  10. Set parchment on top of foil.
  11. Smear butter over the parchment and then wrap up sandwich.
  12. Set sandwich panini press or skillet and cook till you hear sizzle in the foil.
  13. Flip and cook on the other side.
  14. Remove from the heat and carefully open.
  15. Cut in half and enjoy!!
