Mojo Chicken Cuban Sandwich
- 2 cups mojo marinade
- 2-4 chicken cutlets
- 1 large French Cuban loaf, cut into 1/4
- 12 slices Swiss cheese
- 12 slices Black Forest deli ham
- 1/4 cup Dijonaisse sandwich dressing
- Room temperature butter or margarine
- Dill pickle slices
- Foil and parchment paper
- Marinade the chicken in mojo marinade.
- Store the marinated chicken in an airtight container and chill in the refrigerator for at least 2 hours before preparing sandwiches.
To prepare sandwiches:
- Sauté the chicken in the skillet until cooked through.
- Remove from the skillet & set on a plate.
- Cut chicken into slices for the sandwich.
- Preheat skillet or panini press to medium high heat.
- Cut each loaf piece in half lengthwise.
- Spread dijonaisse on each half.
- Add 3 ham slices to each sandwich, top with sliced chicken, 3 slices Swiss cheese and pickles.
- Put the bread lid on top.
- Cut sheets of foil & parchment double the size of each sandwich.
- Set parchment on top of foil.
- Smear butter over the parchment and then wrap up sandwich.
- Set sandwich panini press or skillet and cook till you hear sizzle in the foil.
- Flip and cook on the other side.
- Remove from the heat and carefully open.
- Cut in half and enjoy!!
