Fresh Peach Cobbler

4 large peaches, chopped into large chunks

1 cup self rising flour

1 cup sugar

1 tablespoon cinnamon

1/2 teaspoon salt

1 cup milk

1 stick unsalted butter

1 cup pecans, chopped

  1. Preheat oven to 350 degrees and spray an 8x8 baking pan with nonstick cooking spray.
  2. Place peaches in the bottom of the baking pan.
  3. Heat milk and butter in a microwave safe bowl till butter is melted.
  4. In a medium sized bowl combine the dry ingredients including the pecan.
  5. Sprinkle the dry ingredients over the top of peaches.
  6. Pour the warm milk and butter mixture over the dry ingredients.
  7. Put the baking pan on a cookie sheet and bake for 1 hour or until golden brown and bubbly.
  8. Serve with vanilla bean ice cream.
