Southern Cheese Crackers

  1. 1 pound sharp cheddar cheese, freshly grated
  2. 2 sticks salted butter, room temperature
  3. 3 cups self-rising flour
  4. 2 cups pecans, finely chopped
  5. Tabasco or cayenne pepper


  1. In a large mixing bowl of a stand mixer or using food processor combine all of the ingredients together until a ball is formed.
  2. Add cayenne and Tabasco according to how spicy you would like your crackers to be.
  3. Separate into 3 equal parts.
  4. Roll each ball into a log and wrap in wax or parchment paper.
  5. Chill in the refrigerator for at least 2 hours before cooking. 

To Bake:

  1. Preheat oven to 375°.
  2. Line a baking sheet with parchment paper or silicon baking mat.
  3. Remove the cheese roll from the fridge raider and cut into quarter inch rounds.
  4. Set on baking sheet 1 inch apart and bake for 10 to 12 minutes.
  5. Baking time might vary depending on the thickness of your crackers.
  6. Remove from the oven and allow the crackers to cool.
  7. Store in an airtight container.
