Brunswick Stew
- 1-2 cups hamburger, chicken or leftover bbq
- 1/2 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth*
- 1 can corn, drained
- 1 can tomatoes (either stewed, diced, pureed or Rotel)
- 1 can veggie (your choice…I used okra)
- 2 can beans, drained well and rinsed
- 1-2 cups fresh vegetables, chopped (good time to use veggies)
- 1/2 cup barbecue sauce
- 1 teaspoon pepper
- Red pepper flakes, for heat
In a large stockpot, saute the onion and garlic in olive oil till tender. Pour the beef broth into the pot and then add in all of the veggies/beans. Stir in the barbecue sauce, pepper and red pepper flakes. Place a lid on the pot and simmer on low for 45 minutes. Serve with cornbread or crackers.
