Chicken Parmesan
Add oil to a deep sauté pan so that there is 3 inches of oil in the pan. Heat to medium high heat. While the oil is heating, set out 3 shallow bowls and fill with the flour, beaten egg, and bread crumbs. Add parmesan cheese to the bread crumbs and stir to combine. Dredge the chicken in flour and then transfer to egg mixture. Make sure to cover the chicken completely with egg and then dredge in the bread crumb mixture. Transfer the breaded to chicken to the hot oil and cook till browned on both sides.
Spray a 9x13 baking pan with nonstick cooking spray. Pour 1/2 of the spaghetti sauce into the bottom of the pan. Set cooked chicken cutlets in the pan and continue till all cutlets are cooked. Sprinkle the cutlets with mozzarella cheese and then pour the remaining spaghetti sauce over the top. Cover with foil and cook in the oven at 350 for 30 minutes. Serve with spaghetti noodles.
