Meyer Lemon Almond Bars

2 1/4 cups flour, divided

1/2 cup powdered sugar

2 sticks unsalted butter

1 teaspoon vanilla paste

1/2 cup chopped toasted almonds

Zest of 2 Meyer lemons

4 large eggs

1 1/2 cups sugar

1/2 cup fresh Meyer lemon juice

1 teaspoon baking powder

Preheat the oven to 350 degrees. Line a 9x13 baking sheet with parchment paper and spray with nonstick cooking spray. In a large bowl, beat together the softened butter, powdered sugar, 2 cups of flour, vanilla paste and toasted almonds. This will form a dense cookie dough. Place this in the bottom of the baking sheet and press onto the bottom. Bake for 20 minutes. While the crust is baking whisk together the eggs, sugar, lemon zest, lemon juice, baking powder and the remaining 1/4 cup of flour. Once the crust is done cooking pour the lemon custard over the top and bake for an additional 30 minutes. Remove from the oven and allow the bars to cool completely before cutting into bars. Dust with powdered sugar.
