Mom's Oriental Salad

INGREDIENTS:

  • 2 packages ramen noodles, chicken flavor
  • 1 package coleslaw mix (no dressing)
  • 1 bunch green onions, diced (2-5)
  • 1/2 cup sunflower seeds
  • 1/2 cups almonds, slivered and sauted in1 tablespoon butter
  • 2 cups celery, diced
  • 2 cups cooked chicken, diced

Dressing:

  • 1/2 cup olive oil
  • 1/3 cup apple cider vinegar
  • 1/4 cup sugar
  • 2 tablespoons ginger, grated
  • Seasoning packet from ramen noodles

DIRECTIONS:

1. Mix in a large bowl, ramen noodles, coleslaw mix, green onions, sunflower seeds, almonds and chicken.

2. In a separate small bowl, whisk together olive oil, vinegar, sugar, ginger and seasoning from ramen noodles.

3. Pour dressing mixture in large bowl and refrigerate for at least 3 hours before serving.
