Chicken Curry

1 Tablespoon Ghee
½ Cup Chicken (Chopped)
¼ Cup Sliced Mushrooms
1/8 Cup Sliced Onion
½ tsp Chopped Garlic
½ tsp Curry Powder
Pinch of Salt
½ Cup Chicken Stock mixed with 1 Tablespoon Corn Starch
1/8th Cup Diced Green Onion
1 tsp Sambal Chili Paste
½ Cup chopped Bok Choy

Stir fry all ingredients then add chicken stock and cornstarch and simmer until thickened.

* Options - Coconut milk, Kaffir Lime Leaves, fresh basil
