1 Red Bell Pepper
1 Zucchini
1 Yellow Squash
1 Eggplant
1 Roma Tomato
1 Carrot
2 Garlic Cloves, chopped
1 tbs fresh Thyme
Salt and Pepper, to taste
Olive Oil


1. Cut all of the vegetables in half and toss in olive oil, salt and pepper.

2. Place on the grill until they begin to caramelize, and remove from heat.

3. Cut into bite size pieces and add garlic and fresh thyme.

4. Toss and serve. You can also toss the vegetables into pasta for fuller fare.
