Bourbon Chocolate Pecan Pie
Serves: 8
Ingredients:
1 (9 inch) pie crust (I use Pillsbury)
1 cup sugar
1 cup light corn syrup
1/2 cup unsalted butter
4 eggs, beaten
1/4 cup bourbon
1 teaspoon vanilla or vanilla paste
1/4 teaspoon salt
6 ounces semisweet chocolate chips
1 cup chopped pecans
Preparation:
Preheat oven to 325 degrees.
In a saucepan combine sugar, corn syrup, and butter. Cook over medium heat, make
sure to stir constantly until butter and sugar is melted. Allow to cool for about 15
minutes.
In a large bowl whisk together the eggs, bourbon, vanilla and salt. IMPORTANT TIP!!!
Add in 1/2 cup of warm sugar mixture to eggs mixture whisking constantly. Then
SLOWLY add in the rest of the warm syrup...KEEP STIRRING! (This keeps you from
having scrambled eggs in your pecan pie!) Add pecans and chocolate chips. Pour
mixture into pie crust. Bake for 50-55 minutes for until pie does not jiggle.
Serve with vanilla ice cream!
