½ lb mild or hot Italian sausage, sliced thin
12 oz kale, chopped
2 potatoes, diced
½ onion, chopped
1 qt chicken stock
3 ts olive oil
1 ts sour cream
Dash of Paprika
Salt to taste
1. Saute onion until soft, about ten minutes in a large stockpot.
2. Add sausage, chicken stock, water, olive oil, salt, along with potatoes and kale to pot. Let it boil, and then cover and turn the heat down to simmer. Cook only until potatoes are tender about 15-20 minutes.
3. Serve this bowl of soup topped with sour cream and sprinkle with paprika.
