INGREDIENTS:
1 whole chicken
¼ cup of diced pancetta, or bacon
¼ cup of olive oil
1 onion chopped
4 cloves of garlic
1 stalk of celery, chopped
6 or 7 chopped tomatoes
1 red bell pepper chopped
¾ cup of white wine
½ a teaspoon of fresh rosemary
1 cup fresh mushrooms, sliced
½ cup of chopped basil
2 tbsp, oregano
½ cup chopped parsley
½ cup of olives, sliced
½ cup of tomato paste or tomato sauce
DIRECTIONS:
1. Begin by heating olive oil in a large skillet. Add the onion, garlic and pancetta. Let cook for a minute then add your chicken. Evenly cook for 30 minutes.
2. Add wine and let cook long enough for the alcohol to evaporate (about 10 minutes).
3. Add celery and red pepper.
4. Add herbs and chopped tomatoes, then cover with tomato sauce and cook for another 20 minutes.
5. Finally, add sliced mushrooms and olives and cook for another 15-30 minutes.
