Ingredients:
Causa
2 lbs Yellow Potatoes
2 lbs Peruvian Potatoes
1 oz Diced green onion
1/4 oz. Garlic power
Salt & Pepper to taste
Tuna filling
16 oz. Albacore Tuna
4 Diced Roma Tomatoes
1 med. Jalapeno diced
2oz Red onion diced
1/2 oz. Diced cilantro
2 Tbsp Olive Oil
1 lime zest &juice
Salt to taste
Garnish: Minced cilantro
Preparation:
1. Boil the potatoes and purée separately while hot while hot. Allow the purée to cool. Combine the mixture with the diced green onion, garlic powder ,oil salt and pepper. Mix with a spoon until combined and season to taste. Put Peruvian and white potatoes in piping bags separately.
2. Tuna Filling: In a large bowl mix Tuna, Oil, lime juice and zest, onion,tomato,jalapeno, and cilantro together. Season with salt to taste.
3. Pipe the causa in the bottom of a ring mold, alternating first white then purple. Then scoop in a large helping of tuna salad. Next pipe potatoes over tuna first white then purple. Top with a spoon full of the tuna salad,then garnish with minced cilantro and drizzle with olive oil.
4. Chill for 30 minutes remove ring and serve.
