Turkey Vegetable Sushi

½ of 8-oz pkg reduced-fat cream cheese, softened
1 medium carrot, coarsely shredded
8 slices deli roasted turkey
½ cup coarsely shredded zucchini
2 tsp snipped fresh dillweed (or ½ tsp dried dillweed)
½ cup finely chopped red sweet pepper
- Carefully spread cream cheese onto each slice of turkey.
- Sprinkle with dillweed and top with vegetables.
- Tightly roll up each turkey slice. Cover and chill at least 1 hour or until ready to serve.
- Cut rolls crosswise into 1-inch slices.
