Black Bean Salsa
Prep: 15 minutes
Servings: 10 (1/3 cup salsa and 1 oz baked tortilla chips)
Ingredients:
1 15-ounce can black beans, rinsed and drained
1-1/2 cups chopped and seeded cucumber (1 medium)
1/2 cup chopped tomato (1 medium)
1/2 cup sliced green onions (4)
1/4 cup lime juice
1 Tbsp snipped fresh cilantro
1 Tbsp olive oil
1/2 tsp ground cumin
1/8 tsp salt
1/8 tsp cayenne pepper
Baked tortilla chips
Instructions:
In a medium bowl, combine beans, cucumber, tomato, green onions, lime juice, cilantro, oil, cumin, salt and cayenne pepper.
Cover and chill for 4 to 24 hours.
Serve salsa with tortilla chips.
HINT: This salsa makes a great dipper but it also makes a terrific topper! Spoon it over grilled pork, chicken or salmon.
