4th of July Parfait

2 cups fresh strawberries, washed, hulled, quartered
1 T. sugar
1 t. fresh lemon juice
1 cup fresh blueberries, washed and stemmed
4 scoops (approximately ¼ - ½ cup each) Blue Bell Homemade Vanilla Ice Cream
Frozen whipped topping, thawed
Mint leaves as garnish

In a small bowl, combine strawberries, sugar and lemon juice and mix well. Stir occasionally until sugar is dissolved and syrup forms. In 4 parfait glasses, add the following layers: 1/4 cup strawberries, 1 small scoop ice cream, ¼ cup blueberries, 1 small scoop ice cream, and finish with ¼ cup strawberries. Add a dollop of whipped topping. Garnish with mint leaves. Makes 4 servings.
