Ingredients:
1 full head of cauliflower (roughly chopped, washed and rinsed)
1 or 2 cups of whole milk
1/2 cup Chicken Broth
4 cloves of garlic (minced)
1 yellow onion (chopped)
1 cup parmesan cheese
1 tsp fresh Italian parsley (finely chopped) *optional
garlic powder (to taste)
salt and pepper (to taste)
-In large chunks place cauliflower in bowl with milk and boil until it is really soft
Directions:
-Sauté fresh garlic and onion in olive oil until tender
-Drain cauliflower and add to a food processor with sauteed garlic, onion, parsley (if using), and broth. Process until mixture is creamy. Add salt, pepper and garlic powder until you reach your desired taste.
-Pour sauce over pasta or cooked steak. Top with sautéd mushrooms. Serve and enjoy.
For a "mock" garlic mash potato, add drained cauliflower to food processor along with:
Ingredients:
2 cloves garlic
1 tablespoon cream cheese
1/4 cup grated Parmesan
Salt, pepper
Snipped fresh chives for garnish
Directions:
Purée mixture until smooth. Garnish with fresh chives and small pat of butter. Hint; For added flavor, try roasting the garlic and add a little fresh rosemary
