Big J Dressing


3 packages Jiffy cornbread, prepared according to package

2 cups of seasoned bread crumbs

1 onion, chopped

1 cup celery

2 1/2 cups chicken broth

1 chicken breast, shredded

3 hard boiled eggs, sliced

1 teaspoon thyme

1 teaspoon sage

1 teaspoon salt

1 teaspoon pepper


Crumble cornbread in a large bowl. In a medium sauce pan simmer chicken broth, chicken breast, celery and onion till tender. Pour the chicken broth over the cornbread and seasoned bread crumbs till it is moist and holds together. Sprinkle in the thyme, sage, salt and pepper. Place dressing mixture in a greased casserole dish. Top with hard boiled eggs and bake for 30-40 minutes.
