Maui Style Ribs
3 lbs of pork country style ribs
1/4 cup Head Country seasoning salt
¼ cup apple cider vinegar
¼ cup Head Country barbecue sauce
3 tablespoons pan drippings
3 tablespoon Garden Club pineapple preserves
1 tablespoon soy sauce
1 tablespoon Dijon mustard
Preheat oven to 300 degrees and cover a baking sheet with an extra large sheet of heavy duty foil. In a small bowl, sir together the seasoning salt and 1/4 cup of apple cider vinegar. Rub ribs all over with the rub paste. Cover the ribs with another sheet of foil and bake for 3 1/2 hours. Remove from the oven and allow to cool.
To make the sauce:
In a medium sized bowl combine the BBQ sauce, pineapple preserves, pan drippings, soy sauce and Dijon mustard. Stir to combine.
Heat grill or grill pan to high heat. Baste ribs in sauce and place on the grill. Turn down the heat to medium low and allow ribs to warm and get a little char on them. Flip and do the same on the other side. Remove from heat and enjoy.
