Blackened Salmon Burgers

Ingredients:

4 salmon patties, ground

1 tablespoon capers

1 teaspoon tarragon

salt and pepper

blackened spice

Instructions:

In a food processor or blender pulse the salmon patties till they are ground. Transfer the meat to a bowl and add 1/4 cup bread crumbs, capers, tarragon, salt and pepper. Form patties and then refrigerate for 30 minutes to set up. Sprinkle with blackened spice. Cook on a hot grill or skillet for 3-4 minutes per side.
