Champagne Orange And Couscous Salad

2 packages pearl sized couscous, prepared according to package

3 fresh oranges peeled with segments removed

2 cups fresh arugula

1/2 cup dried cherries

Juice of 1 lemon

Juice of 3 oranges

1/4 cup champagne vinegar

1/2 cup olive oil

1 tablespoon honey

salt and pepper

2 tablespoon pistachios, chopped

Place the couscous in a large bowl. Toss the couscous with oranges, arugula, and cherries. In a small bowl whisk together the lemon juice, orange juice, champagne vinegar, olive oil, honey, salt and pepper. Pour the dressing over the top of the salad and toss together. Serve with a sprinkle of pistachios.
