French Onion Soup
6 onions, sliced thin
3 tablespoon olive oil
2 tablespoon butter
3 tablespoon sugar
4 sprigs fresh thyme
2 bay leaves
6 cups beef broth
1 loaf garlic toast, toasted
8 Swiss cheese slices
In a large Dutch oven saute the onions, thyme and bay leaves, olive oil and butter till they are tender. Sprinkle with sugar and continue cooking the onions till they caramelize. That means they will turn a dark brown color. Once this happens, add in the beef broth. Cook till the broth and onions begin to simmer. To prepare the soup cups: Place a piece of garlic toast in a bowl or mug. Top with Swiss cheese and place under the broiler till the cheese is bubbly.
