Chicken Lo-Mein
1 rotisserie chicken, meat pulled from chicken
1 package spaghetti noodles, cooked al dente
1 red pepper, sliced thin
1 yellow pepper, sliced thin
4 green onions, sliced
2 cups broccoli florets
1 cup pea pods
3/4 cup teriyaki sauce
1 tablespoon minced ginger
4 cloves garlic, minced
1 tablespoon sesame oil
2 tablespoon coconut oil
In a large wok or skillet, sauté the chicken, peppers, onions, broccoli florets till tender. In a small bowl whisk together the teriyaki sauce, ginger, garlic and sesame oil. Add the sauce to the skillet and cook till bubbly. Stir in the spaghetti noodles and toss to coat with the sauce. Add the pea pods and cook till the noodles are warmed through. Serve!
