Balsamic Roasted Brussel Sprouts
1 pound Brussel sprouts
2 tablespoons butter, melted
4 tablespoons extra-virgin olive oil
2 tablespoons balsamic glaze
¼ cup pecans, toasted and chopped
Sea salt and pepper
Preheat oven to 400 degrees. Line baking sheet with parchment paper. Trim the hard ends from the Brussel sprouts. Remove and damaged or browned leaves. Cut Brussel sprouts in half lengthwise. In a small bowl melt butter. Add the olive oil, salt and pepper as well as the trimmed Brussel sprouts. Toss them in the butter mixture and place on the prepared baking sheet. Bake for 20 minutes. Flipping the sprouts half way through. Remove from the oven and drizzle with balsamic glaze and sprinkle with pecans. Return to the oven and bake an additional five minutes. Remove from the oven and serve.
