Sweet Potato Chips with Marshmallow Dipping Sauce
4 large sweet potatoes, peeled and sliced thin on a mandolin
Canola or vegetable oil
1 1/2 cup marshmallow cream
1/4 teaspoon nutmeg
1/2 cup sour cream
Heat the oil in a large stock pot or fryer to 350 degrees. Place the potato slices in the hot oil and cook till they are golden brown. Remove the chips from the heat and allow them to drain on a plate lined with paper towels. Sprinkle with sea salt.
To make the dipping sauce: Mix together the marshmallow cream, sour cream and nutmeg. Place in a small ramekin for dipping.
