Easy Chicken Scallopini
4 boneless skinless chicken breasts pounded thin
1/4 cup flour
Olive oil
Salt and pepper
1 lemon
Capers
2 garlic cloves chopped
2 tablespoon butter
Pasta of your choice
In a large skillet over medium heat, warm 1-2 tablespoons of olive oil. Place the flour in a shallow pan and season with salt and pepper. Dredge the chicken in the flour and then cook in the pan till browned on both sides. Remove the chicken from the pan. Reduce the heat and add the butter and lemon juice to the pan. Stir till the butter is melted and then add the garlic and capers. Stir till the sauce is thickened. Return the chicken to the pan and simmer for a few minutes in the sauce. Serve!
