Green Chili Corn Cakes
- 1 1/2 cups fresh corn
- 6 pieces crisp bacon, crumbled
- 1 can green chilis
- 1/2 cup red onion, diced fine
- 1 cup corn meal, gluten free
- 1/4 cup Gluten Free baking mix
- 3/4 cup milk
- 1/4 cup sour cream
- 1 egg, beaten
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon baking powder
- 1/2 stick salted butter
- In a large bowl, combine all of the ingredients and stir.
- In a large non-stick skillet, melt the butter and then using a large ice cream scoop, add scoops of the corn mixture to the hot skillet.
- Cook like a pancake and flip when browned. Continue cooking other side until browned on both sides. Serve with the salsa of your choice.
