Triple P Pasta

  • 1 package pappardelle, cooked al dente
  • 1/2 cup cubed pancetta
  • 1/2 onion, diced
  • 1 cup fresh English peas, blanched
  • 1/4 cup freshly grated Parmesan cheese
  1. In a large skillet, saute the onion and pancetta till they are lightly browned.
  2. Add in the peas and pasta and continue to cook.
  3. Pour in 1/2 cup of the reserved pasta water to the pan.
  4. Sprinkle with parmesan cheese and toss.
  5. Serve with your favorite green salad.
