Egg And Avocado Tostada

  • 4 corn tostadas
  • 4 eggs
  • 1/4 cup milk
  • 1 cup diced bell pepper mix
  • ½ cup chopped red onion
  • 1 ripe avocado, sliced
  • 4 Tbsp. shredded pepper jack cheese
  • 1/4 cup fresh salsa
  1. Place the tostadas on a baking sheet. Set aside.
  2. In a bowl, whisk together eggs, salt & pepper and milk.
  3. Warm a skillet over medium heat.
  4. Add a teaspoon of butter and sauce the peppers.
  5. Pour the egg mixture into the pan.
  6. Using a heat save spatula stir the eggs till they are cooked through.
  7. Sprinkle with cheese and remove from the heat.
  8. To prepare the tostada by adding the scrambled eggs on top of the tostada.
  9. Add slices of avocado to the top.
