Spinach Artichoke Queso
- 1 block Velveeta cheese, melted
- 1 can rotel tomatoes, drained
- 1 package frozen spinach, thawed
- 1/2 cup chopped artichoke hearts
- Milk
- In a medium sized bowl melt the Velveeta in the microwave.
- While the cheese is melting, make sure to squeeze out any excess water from the spinach.
- Stir in the tomatoes, spinach and artichoke hearts.
- Cook in the microwave for an additional 2-3 minutes to make sure everything is warm.
- Serve with tortilla chips!
