Chive Egg Salad
- 5 eggs, hardboiled
- 2 tablespoon mayonnaise
- 1 teaspoon dijon mustard
- 1 tablespoon chives, finely chopped
- In a small bowl, break the hardboiled eggs with a potato masher until there are small pieces.
- Add the mayonnaise, mustard and chives.
- Add salt and pepper to taste.
- Stir together and spread on soft crustless bread.
- Cut in a diagonal or into small squares to serve.
- Place on a platter.
Dill and Cucumber Cream
- 1/2 cup cream cheese, softened
- 1 tablespoon fresh dill, chopped
- 1/2 teaspoon garlic salt
- 1 English cucumber, peeled and sliced extra thin
- In a small bowl combine the cream cheese, dill and garlic salt.
- Spread the cream cheese mixture on both slices of bread.
- Add the thinly sliced cucumber on one piece of bread and then place second slice on top.
- Cut into squares.
- Keep chilled till you are ready to serve.
