Mango Pepper Chicken with Broccoli

  • 1 pound boneless skinless chicken breast, cut into cubes
  • 1/2 onion, chopped
  • 1 tablespoon oil
  • 1/4 cup pepper jelly
  • 1/4 cup BBQ sauce
  • 2 tablespoon soy sauce
  • 1 tablespoon minced garlic
  • 1 cup mango slices
  • 3 cups broccoli florets, steamed
  1. In a large skillet add oil and heat to medium high and then add in the chicken.
  2. Cook till the chicken is no longer pink.
  3. Add in the onion and garlic and continue to cook.
  4. Stir in the pepper jelly, hoisin sauce, and mango slices.
  5. Continue to simmer together for 5 minutes.
  6. Carefully add the steamed broccoli and toss to coat with the sauce.
  7. Serve over hot white or brown rice.
