Caramel Nut Corn
- 13 cups popped popcorn (not microwave)
- 2 cups brown sugar
- 1 cup unsalted butter
- 1 teaspoon sea salt
- 1/2 cup dark corn syrup
- 1 teaspoon baking soda
- 1 tablespoon vanilla extract
- Place the brown sugar, butter, sea salt and corn syrup in a large microwave safe plastic bowl.
- Microwave on high for 5 minutes.
- Carefully remove the how mixture from the microwave and add in the baking soda and vanilla.
- Stir together and then pour over the popcorn and toss to coat all of the popcorn.
- Place the pop con on the parchment lined baking sheet and bake at 250° for 30 minutes.
- Stir halfway through the baking time.
- Once done baking remove from the oven and allow to cool.
- Store in an airtight container.
