Cranberry & Amaretto Chutney

  • 1 bag fresh cranberries
  • 1/2 cup water
  • 1/2 cup fresh orange juice
  • 1 cup sugar
  • 1 tablespoon candied dried ginger
  • 1/4 orange
  • 2 tablespoon amaretto
  1. In a medium sized saucepan add the cranberries, water, fresh orange juice, and sugar.
  2. Bring the cranberries to a boil and cover.
  3. Reduce the heat and simmer for 10 minutes.
  4. Remove the pot from stove and allow the cranberries to cool slightly.
  5. Poor the cranberries into a food processor.
  6. Add in the orange (peel and all), amaretto, and candied ginger.
  7. Pulse till the cranberries are chopped.
  8. Pour the cranberry chutney into a plastic container and cover.
  9. Refrigerate overnight.
