Sautéed Brussels Sprouts and Sweet Potato
- 1 pound fresh Brussels sprouts, sliced in half
- 2 cups fresh sweet potato, thinly sliced
- 3 garlic cloves, chopped
- Salt/pepper
- Olive oil
- Lemon juice
- In a large skillet heat the olive oil over medium high heat.
- Carefully add in the Brussel sprouts, sweet potatoes, garlic, salt and pepper.
- Stir together for 2 minutes and then add 3 tablespoons water to the pan and cover for 3 minutes.
- Remove the vegetables from the pan and squeeze fresh lemon juice over the top.
