ButterPup Cupcakes
- 1 cup whole wheat flour
- 1/4 cup old fashioned oats
- 2 teaspoons baking powder
- 1/2 cup pumpkin puree
- 3 tablespoon honey
- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 2 large eggs
- 2 tablespoon honey
- ****add 1/4 cup bacon bits (optional)
Frosting
- 4 ounces cream cheese, at room temperature
- 1/4 cup creamy peanut butter
- 2 tablespoon honey
- Sprinkles & dog bones
- Preheat oven to 350 degrees F.
- Line a muffin tin with paper liners; set aside.
- In a large bowl, combine flour, oats, baking powder, pumpkin, apple sauce, honey, vegetable oil and eggs.
- Scoop the batter into the muffin cups evenly.
- Bake for 15-20 minutes.
- Remove from the oven and cool.
- To make the frosting, mix together the cream cheese, honey and peanut butter.
- Place in a piping bag and squeeze onto cupcakes.
- Top with sprinkles and a dog bone.
